Executive Chef Valice Francis

Chef Valice Francis brings global experience and a passion for premium ingredients to his role as Executive Chef of Daarukhana.


Born and raised in Delhi, Francis perceives cooking as a fascinating science, experimenting with cooking styles and unexpected flavour combinations to deliver unique results. It was his passion for creativity that caught the attention of the famed Oberoi Hotels group.

Francis enjoyed meteoric success during his time at Oberoi — he was promoted to Head of Butchery within one year and learned the ins and outs of running a team, as well as a business. He later joined gourmet brand Le Cirque where he was delighted to have unlimited access to premium ingredients, many of which he continues to incorporate into his cuisine today, before departing for a two-year stint in the Cayman Islands. It was here that Francis began to explore Caribbean flavour combinations and cooking techniques. In fact, he was amazed at the similarities between Caribbean and Indian food. He began to focus less on fine-dining plating, and developed a deep love of comforting dishes, which reignited his interest in the food of his homeland.


In 2016, Francis returned to India to open The Masala Library – a 70-seater progressive Indian restaurant. He was able to utilise his diverse experience to create unparalleled flavour combinations which celebrated Indian cuisine in unexpected ways. His success as chef specialising in Indian cuisine was cemented by an invitation to join the prestigious Indian Accent restaurant in Delhi as Chef de Cuisine.

Today, Chef Francis leads the kitchen at Daarukhana, one of Hong Kong’s most premium Indian restaurants, where he revives classic nostalgic flavours with modern touches and global ingredients. His menu is happy blend of fancier plates and homestyle cooking, and his inimitable style ensures a full dining room each day and night.


In his free time, Francis is a keen photographer and film addict. Although he has no preference between Hollywood and Bollywood, his preferred genre is always romantic comedy.
